Vegan Sugar Cookies


1.75 c flour

1 tsp baking soda

1/8 t salt

1/4 c vegetable oil

1.25 c sugar

2 tsp honey + 1/4 c vanilla soy milk (mix honey into milk at room temp)

Because these cookies are made with oil the batter will not be as stiff but you can still roll out and cut shapes. Just add a bit more flour until it is less sticky and refrigerate for several hours. I find rolling them on foil works better as you can just put the foil on the baking sheet and bake them.

Bake at 375 8-10 minutes or depending on the thickness of the cookie. Thinner cookies cook faster so keep an eye on them!

Decorate with a glaze made with powdered sugar and a tiny bit of water and food colorant and, of course, sprinkles
